Squid with Black Bean Sauce

The sauce

soy sauce

oyster sauce

dark soy sauce

sesame oil

cornstarch

Instructions
- Cut the squid body in half lengthwise and slice into 1.5-inch squares, scoring the surface lightly.
- In a small bowl, mix together all the sauce ingredients.
- Bring water to a boil, add the squid, and blanch for 10 seconds until it turns white. Drain and set aside.
- Heat a wok over high heat, add oil, garlic, onion, red chili, and fermented black beans, and stir-fry until fragrant.
- Add the squid and toss quickly before adding the sauce. Stir-fry for about 5 seconds and add the scallions.
- Turn off the heat and toss everything until coated with the sauce. Serve immediately.
