Squid with Black Bean Sauce

Ingredients

The squid and vegetables

  • 10 oz fresh cleaned squid
  • 2 tablespoons oil
  • 1 tablespoon thinly sliced garlic
  • ½ yellow onion cut into pieces
  • 2 red chili cut into pieces
  • 2 tablespoons fermented black beans, rinsed and mashed
  • 1 tablespoon chopped scallion, white part only
  • to taste sugar, optional

The sauce

  • 2 teaspoons soy sauce
  • 2 teaspoons oyster sauce
  • 1 teaspoon dark soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Instructions

  1. Cut the squid body in half lengthwise and slice into 1.5-inch squares, scoring the surface lightly.
  2. In a small bowl, mix together all the sauce ingredients.
  3. Bring water to a boil, add the squid, and blanch for 10 seconds until it turns white. Drain and set aside.
  4. Heat a wok over high heat, add oil, garlic, onion, red chili, and fermented black beans, and stir-fry until fragrant.
  5. Add the squid and toss quickly before adding the sauce. Stir-fry for about 5 seconds and add the scallions.
  6. Turn off the heat and toss everything until coated with the sauce. Serve immediately.
