Strawberry Rhubarb Bars

The crust and crumble

The filling

rhubarb, cubed

granulated sugar or honey

strawberries, hulled and sliced

Instructions
- Preheat the oven to 350°F and grease a 9x9 baking dish.
- In a mixing bowl, whisk together the brown sugar and melted butter.
- Slowly add the flour, oats, salt, and baking soda, mixing until pea-sized dough balls form.
- Press half of the dough mixture into the bottom of the greased baking dish and bake for 15 minutes.
- In a saucepan, heat ½ cup of water with rhubarb and sugar/honey until simmering for 2-3 minutes.
- Turn off the heat and whisk in strawberries, lemon zest, and cornstarch.
- Pour the filling onto the baked crust and sprinkle the remaining dough on top.
- Bake for an additional 18-20 minutes until the top is browned and the filling is thick.
- Allow to cool and slice into 16 bars.
