Ingredients

Crumb Layers

  • 1 ⅓ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 ⅓ cups rolled old fashioned oats
  • ½ cup packed light brown sugar
  • ½ cup granulated sugar
  • ¾ cup unsalted butter, melted
  • 2 tsp vanilla extract

Filling

  • 1 ¾ cups hulled and diced strawberries
  • 1 ½ cups diced rhubarb, sliced ¼-inch thick
  • 1 Tbsp fresh lemon juice
  • cup granulated sugar
  • 1 Tbsp cornstarch

Instructions

  1. Preheat the oven to 350°F and prepare a 9x9-inch baking dish.
  2. Mix the crumb topping ingredients together and press 2/3 of the mixture into the bottom of the baking dish.
  3. In another bowl, combine the diced strawberries and rhubarb with lemon juice.
  4. In a separate bowl, whisk together sugar and cornstarch, then add to the fruit mixture and toss to coat.
  5. Pour the fruit mixture over the crumb layer in the baking dish and top with the remaining crumble topping.
  6. Bake for 45-50 minutes until the top is golden brown and the filling is bubbling.
  7. Cool on a wire rack before cutting into squares.
