Strawberry Rhubarb Bars

Instructions
- Preheat the oven to 350°F and prepare a 9x9-inch baking dish.
- Mix the crumb topping ingredients together and press 2/3 of the mixture into the bottom of the baking dish.
- In another bowl, combine the diced strawberries and rhubarb with lemon juice.
- In a separate bowl, whisk together sugar and cornstarch, then add to the fruit mixture and toss to coat.
- Pour the fruit mixture over the crumb layer in the baking dish and top with the remaining crumble topping.
- Bake for 45-50 minutes until the top is golden brown and the filling is bubbling.
- Cool on a wire rack before cutting into squares.
