Ingredients

Fruit Filling

  • 1 cup diced strawberries
  • 1 cup diced rhubarb
  • 1 teaspoon cornstarch
  • ½ teaspoon lemon juice
  • ½ teaspoon maple syrup
  • ¼ teaspoon vanilla

Crumble Crust and Topping

  • cup whole rolled oats
  • cup chopped walnuts
  • ½ cup almond flour
  • ½ cup brown sugar
  • ¼ cup ground flaxseed
  • 1 teaspoon cinnamon
  • ¼ teaspoon sea salt
  • 2 tablespoons firm coconut oil
  • tablespoons water

Instructions

  1. Preheat the oven to 350°F and line an 8x8-inch baking pan with parchment paper, spraying the sides with nonstick spray.
  2. In a medium bowl, mix the strawberries, rhubarb, cornstarch, lemon juice, maple syrup, and vanilla to make the fruit filling.
  3. In a food processor, combine the oats, walnuts, almond flour, brown sugar, flaxseed, cinnamon, and salt, pulsing until combined.
  4. Add the coconut oil and pulse again, then add water and pulse until mixed.
  5. Press ⅔ of the crumble mixture into the baking pan to form a crust and bake for 20 to 25 minutes until golden brown.
  6. Let the crust cool for 15 minutes, then spread the fruit filling over it and sprinkle the remaining crumble on top.
  7. Bake for an additional 20 minutes until the fruit is soft and the topping is crisp.
  8. Allow the bars to cool completely before slicing.
