Instructions
- Preheat the oven to 350°F and line an 8x8-inch baking pan with parchment paper, spraying the sides with nonstick spray.
- In a medium bowl, mix the strawberries, rhubarb, cornstarch, lemon juice, maple syrup, and vanilla to make the fruit filling.
- In a food processor, combine the oats, walnuts, almond flour, brown sugar, flaxseed, cinnamon, and salt, pulsing until combined.
- Add the coconut oil and pulse again, then add water and pulse until mixed.
- Press ⅔ of the crumble mixture into the baking pan to form a crust and bake for 20 to 25 minutes until golden brown.
- Let the crust cool for 15 minutes, then spread the fruit filling over it and sprinkle the remaining crumble on top.
- Bake for an additional 20 minutes until the fruit is soft and the topping is crisp.
- Allow the bars to cool completely before slicing.
