Strawberry Rhubarb Filling

sliced rhubarb

Instructions
- 1. Preheat the oven to 350°F (177°C) and line a 9×13-inch baking pan with parchment paper.
- 2. In a large bowl, whisk together the flour, sugars, baking powder, cinnamon, and salt.
- 3. Cut in the cold butter until the mixture resembles pea-sized crumbles.
- 4. In a separate bowl, whisk together the egg, milk, and vanilla, then pour over the flour mixture and mix until crumbly.
- 5. Reserve 2 cups of the crumble mixture and press the rest into the bottom of the prepared pan.
- 6. In another bowl, mix the filling ingredients and spread them over the crust.
- 7. Sprinkle the reserved crumble mixture and oats on top, pressing down lightly.
- 8. Bake for 42-50 minutes until lightly browned and a toothpick comes out mostly clean.
- 9. Allow to cool completely in the pan before cutting into squares.
