Ingredients

Crust & Crumble Topping

  • 3 cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon (optional)
  • ¼ teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • ¼ cup milk
  • cup old-fashioned whole rolled oats

Strawberry Rhubarb Filling

  • cups chopped strawberries
  • cups sliced rhubarb
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon orange zest

Instructions

  1. 1. Preheat the oven to 350°F (177°C) and line a 9×13-inch baking pan with parchment paper.
  2. 2. In a large bowl, whisk together the flour, sugars, baking powder, cinnamon, and salt.
  3. 3. Cut in the cold butter until the mixture resembles pea-sized crumbles.
  4. 4. In a separate bowl, whisk together the egg, milk, and vanilla, then pour over the flour mixture and mix until crumbly.
  5. 5. Reserve 2 cups of the crumble mixture and press the rest into the bottom of the prepared pan.
  6. 6. In another bowl, mix the filling ingredients and spread them over the crust.
  7. 7. Sprinkle the reserved crumble mixture and oats on top, pressing down lightly.
  8. 8. Bake for 42-50 minutes until lightly browned and a toothpick comes out mostly clean.
  9. 9. Allow to cool completely in the pan before cutting into squares.
