Ingredients

Dough

  • 1 lb homemade rough puff pastry or store-bought frozen puff pastry (2 sheets)

Sugar Spice Mixture for Rolling & Filling

  • 1 cup granulated sugar
  • teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cardamom
  • 2 teaspoons orange zest (optional)

Instructions

  1. Prepare the rough puff pastry dough and refrigerate.
  2. Combine sugar, cinnamon, nutmeg, and cardamom in two bowls, adding orange zest to one half.
  3. Roll out the dough on a sugared surface into a 10-inch square, using the first half of the sugar spice mixture.
  4. Sprinkle the second half of the mixture with orange zest on top of the rolled dough and roll tightly into a log.
  5. Chill the logs for 30 minutes.
  6. Preheat the oven to 400°F (204°C) and line baking sheets.
  7. Slice the logs into 3/8 inch thick pieces and arrange on baking sheets.
  8. Bake for 8-9 minutes, flip the cookies, and continue baking for another 10-12 minutes until golden brown.
  9. Cool for 5 minutes on the baking sheets before transferring to a wire rack.
