Cinnamon & Spice Palmiers

homemade rough puff pastry or store-bought frozen puff pastry (2 sheets)
Sugar Spice Mixture for Rolling & Filling

granulated sugar

ground cinnamon

ground nutmeg

ground cardamom

orange zest (optional)
Instructions
- Prepare the rough puff pastry dough and refrigerate.
- Combine sugar, cinnamon, nutmeg, and cardamom in two bowls, adding orange zest to one half.
- Roll out the dough on a sugared surface into a 10-inch square, using the first half of the sugar spice mixture.
- Sprinkle the second half of the mixture with orange zest on top of the rolled dough and roll tightly into a log.
- Chill the logs for 30 minutes.
- Preheat the oven to 400°F (204°C) and line baking sheets.
- Slice the logs into 3/8 inch thick pieces and arrange on baking sheets.
- Bake for 8-9 minutes, flip the cookies, and continue baking for another 10-12 minutes until golden brown.
- Cool for 5 minutes on the baking sheets before transferring to a wire rack.
