The cookies

  • 2 sheets puff pastry
  • 2 cups granulated sugar

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Thaw the puff pastry according to package instructions and keep it cool in the fridge until ready to use.
  3. Spread ½ cup of sugar on the work surface, matching the size of the pastry, and place one puff pastry sheet on top.
  4. Spread another ½ cup of sugar on top of the pastry and gently spread it around.
  5. Use a rolling pin to roll the pastry slightly, ensuring it remains thick but extended.
  6. Fold the right side of the pastry to the center, then the left side, sprinkling more sugar on top.
  7. Repeat the folding process one more time and sprinkle with sugar again.
  8. Fold both sides together, like closing a book, and slice into 3/8-inch thick pieces.
  9. Place the slices on the baking sheet, ensuring they are spaced apart.
  10. Bake for 15-20 minutes, flipping halfway if desired, until lightly golden.
  11. Cool completely before serving.
