Vegan Puff Pastry Palmiers

Instructions
- Sprinkle sugar on the countertop.
- Place the puff pastry on the sugar and sprinkle more sugar on top.
- Roll out the puff pastry into a rectangle about 9x15 inches and ¼ inch thick.
- Flip the pastry and add more sugar, rolling gently to press it in.
- Cut the edges to form a clean rectangle.
- Mark a line down the center of the dough without cutting through.
- Fold one side of the dough in about ¼ of the way, then fold it again.
- Repeat the folding process on the other side.
- Fold the dough in half to create a log shape.
- Wrap the log in plastic wrap and freeze for 15-20 minutes.
- Line a baking sheet with parchment paper.
- Remove the log from the freezer and cut off the ends.
- Slice the log into pieces a little less than ¼ inch thick.
- Place the cookies on the baking sheet, making a V shape and leaving space between them.
- Sprinkle sugar over the tops of the palmiers.
- Chill the baking sheet in the freezer while preheating the oven to 450°F.
- Bake for 10 minutes, then flip and bake for an additional 5-8 minutes until golden.
