Ingredients

The pastry

  • 1 batch vegan puff pastry

The sugar

  • ½ cup sugar

Instructions

  1. Sprinkle sugar on the countertop.
  2. Place the puff pastry on the sugar and sprinkle more sugar on top.
  3. Roll out the puff pastry into a rectangle about 9x15 inches and ¼ inch thick.
  4. Flip the pastry and add more sugar, rolling gently to press it in.
  5. Cut the edges to form a clean rectangle.
  6. Mark a line down the center of the dough without cutting through.
  7. Fold one side of the dough in about ¼ of the way, then fold it again.
  8. Repeat the folding process on the other side.
  9. Fold the dough in half to create a log shape.
  10. Wrap the log in plastic wrap and freeze for 15-20 minutes.
  11. Line a baking sheet with parchment paper.
  12. Remove the log from the freezer and cut off the ends.
  13. Slice the log into pieces a little less than ¼ inch thick.
  14. Place the cookies on the baking sheet, making a V shape and leaving space between them.
  15. Sprinkle sugar over the tops of the palmiers.
  16. Chill the baking sheet in the freezer while preheating the oven to 450°F.
  17. Bake for 10 minutes, then flip and bake for an additional 5-8 minutes until golden.
