Ingredients

  • 2 cups gluten-free 1-to-1 flour blend
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 3 tablespoons vegan butter (cold and cut into cubes)
  • 10 tablespoons vegan butter (frozen and shredded)
  • ½-⅔ cup ice cold water

Instructions

  1. Mix the flour, salt, and sugar in a bowl.
  2. Add cubed butter and mix until coarse crumbs form.
  3. Pour in half the cold water and mix, adding more until the dough holds together but isn't wet.
  4. Knead the dough into a smooth ball and shape it into a square about 1 inch thick.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. Shred the frozen butter and place it in the freezer.
  7. Roll the chilled dough into a 6x12-inch rectangle on a floured surface.
  8. Sprinkle half of the shredded butter over the top ⅔ of the dough.
  9. Fold the dough into thirds, creating layers.
  10. Rotate the dough and roll it out again into a 6x12-inch rectangle.
  11. Add the remaining butter and repeat the folding process.
  12. Wrap the dough and freeze for 15 minutes.
  13. Roll the dough out again and repeat the folding process for a second time.
  14. Wrap and freeze for another 15 minutes before using.
