Gluten-Free Vegan Puff Pastry

Instructions
- Mix the flour, salt, and sugar in a bowl.
- Add cubed butter and mix until coarse crumbs form.
- Pour in half the cold water and mix, adding more until the dough holds together but isn't wet.
- Knead the dough into a smooth ball and shape it into a square about 1 inch thick.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Shred the frozen butter and place it in the freezer.
- Roll the chilled dough into a 6x12-inch rectangle on a floured surface.
- Sprinkle half of the shredded butter over the top ⅔ of the dough.
- Fold the dough into thirds, creating layers.
- Rotate the dough and roll it out again into a 6x12-inch rectangle.
- Add the remaining butter and repeat the folding process.
- Wrap the dough and freeze for 15 minutes.
- Roll the dough out again and repeat the folding process for a second time.
- Wrap and freeze for another 15 minutes before using.
