Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon fine-grain sea salt
  • 9 tablespoons unsalted butter, cold but not frozen
  • 5 ounces water

Instructions

  1. 1. Whisk together the flour and salt in a medium bowl.
  2. 2. Shred the butter on top of the flour mixture using a cheese box grater.
  3. 3. Coat the butter with the flour and mix until combined.
  4. 4. Create a well in the center and pour in about 4 ounces of water, then mix until combined.
  5. 5. Turn the mixture out onto a lightly floured surface and knead a few times to form a rectangle about 1-inch thick.
  6. 6. Fold over the right side, then the left, and turn the dough a quarter turn. Repeat for two more turns.
  7. 7. Wrap the dough in plastic wrap and rest in the fridge for one hour.
  8. 8. Unwrap the dough and give it two more turns. The dough is now ready to use.
