Instructions
- Whisk together flour, sugar, and salt in a bowl.
- Add cold, cubed butter and gently toss to combine.
- Rub the butter into the flour without breaking it down too much.
- Add ice cold water one tablespoon at a time until a shaggy dough forms.
- Transfer the dough to a floured surface and pat it into a rectangle.
- Fold the dough into thirds like a business letter and wrap it tightly.
- Refrigerate for at least 2 hours.
- Roll out the dough into a rectangle and fold it into thirds again.
- Repeat the rolling and folding process a total of 6 times.
- Refrigerate the dough for at least 15 minutes before using.
