Ingredients

  • 1 and 1/3 cups all-purpose flour
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt
  • ¾ cup unsalted butter
  • 6–8 Tablespoons ice cold water

Instructions

  1. Whisk together flour, sugar, and salt in a bowl.
  2. Add cold, cubed butter and gently toss to combine.
  3. Rub the butter into the flour without breaking it down too much.
  4. Add ice cold water one tablespoon at a time until a shaggy dough forms.
  5. Transfer the dough to a floured surface and pat it into a rectangle.
  6. Fold the dough into thirds like a business letter and wrap it tightly.
  7. Refrigerate for at least 2 hours.
  8. Roll out the dough into a rectangle and fold it into thirds again.
  9. Repeat the rolling and folding process a total of 6 times.
  10. Refrigerate the dough for at least 15 minutes before using.
