Homemade Pastry Dough

The egg wash

Instructions
- Whisk warm water, yeast, and 1 tablespoon of sugar in a bowl and let it rest until foamy.
- Whisk in the remaining sugar, milk, egg, and salt.
- Cut cold butter into slices and pulse with flour in a food processor until crumbly.
- Fold the butter mixture into the wet ingredients until just moistened.
- Wrap the dough tightly and refrigerate for at least 4 hours.
- Roll out the dough into a rectangle, fold it, and repeat this process two more times.
- Refrigerate the dough again for at least 1 hour.
- Roll out the dough and shape it as desired.
- Prepare the egg wash and brush it over the shaped dough.
- Chill the shaped dough before baking.
- Preheat the oven and bake until golden brown.
