Ingredients

The dough

  • ¼ cup warm water
  • teaspoons active dry or instant yeast
  • ½ cup whole milk
  • 1 large egg
  • ¼ cup granulated sugar
  • 1 teaspoon salt
  • 14 tablespoons unsalted butter
  • cups all-purpose flour

The egg wash

  • 1 large egg
  • 2 tablespoons whole milk

Instructions

  1. Whisk warm water, yeast, and 1 tablespoon of sugar in a bowl and let it rest until foamy.
  2. Whisk in the remaining sugar, milk, egg, and salt.
  3. Cut cold butter into slices and pulse with flour in a food processor until crumbly.
  4. Fold the butter mixture into the wet ingredients until just moistened.
  5. Wrap the dough tightly and refrigerate for at least 4 hours.
  6. Roll out the dough into a rectangle, fold it, and repeat this process two more times.
  7. Refrigerate the dough again for at least 1 hour.
  8. Roll out the dough and shape it as desired.
  9. Prepare the egg wash and brush it over the shaped dough.
  10. Chill the shaped dough before baking.
  11. Preheat the oven and bake until golden brown.
