Cheesy Green Curry Palmiers

frozen puff pastry (one 14-oz. package or half of a 17.3-oz. package), thawed

Instructions
- Preheat the oven to 400°F.
- Mix the cheddar, mayonnaise, and green curry paste in a bowl until combined.
- Roll out the thawed puff pastry on a floured surface and spread the cheese mixture evenly over it.
- Fold the long sides of the pastry towards the center and press down gently.
- Fold the sides again to form a log and squeeze to adhere.
- Chill the log if it feels too soft for 15-20 minutes.
- Trim the ends of the log and slice it crosswise into 15-16 pieces.
- Lay the pieces flat on a parchment-lined baking sheet, spaced about 2 inches apart.
- Bake for 10 minutes, then reduce the temperature to 350°F and bake for an additional 12-15 minutes until golden.
- Let cool slightly before transferring to a platter to serve.
