Ingredients

The base

  • 2 Tbsp flaxseed meal
  • 5 Tbsp water
  • ½ cup melted vegan butter or coconut oil
  • ½ cup coconut sugar or organic cane sugar
  • ¼ cup maple syrup or agave nectar
  • 1 tsp vanilla extract
  • ¾ tsp baking powder
  • ¼ tsp sea salt
  • ½ cup unsweetened cocoa powder
  • ¾ cup gluten-free flour blend
  • ¼ cup almond meal

Optional add-ins

  • cup pecans or walnuts
  • cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F (176°C) and grease an 8x8-inch baking dish with coconut oil, then line it with parchment paper.
  2. In a small bowl, prepare the flax eggs by mixing flaxseed meal and water, then set aside.
  3. In a large bowl, combine melted vegan butter, coconut sugar, maple syrup, and vanilla extract, whisking until well mixed.
  4. Add the flax eggs to the mixture and whisk again until combined.
  5. Stir in baking powder, sea salt, and cocoa powder, mixing well.
  6. Fold in the gluten-free flour blend and almond meal until just combined, then add any optional add-ins like nuts or chocolate chips.
  7. Spread the batter evenly in the prepared baking dish and add more toppings if desired.
  8. Bake for 17-22 minutes until the edges are dry and the center is set.
  9. Allow to cool in the pan for at least 10 minutes before lifting out and cutting into squares.
