Instructions
- Preheat the oven to 350°F (176°C) and grease an 8x8-inch baking dish with coconut oil, then line it with parchment paper.
- In a small bowl, prepare the flax eggs by mixing flaxseed meal and water, then set aside.
- In a large bowl, combine melted vegan butter, coconut sugar, maple syrup, and vanilla extract, whisking until well mixed.
- Add the flax eggs to the mixture and whisk again until combined.
- Stir in baking powder, sea salt, and cocoa powder, mixing well.
- Fold in the gluten-free flour blend and almond meal until just combined, then add any optional add-ins like nuts or chocolate chips.
- Spread the batter evenly in the prepared baking dish and add more toppings if desired.
- Bake for 17-22 minutes until the edges are dry and the center is set.
- Allow to cool in the pan for at least 10 minutes before lifting out and cutting into squares.
