Vegan Gluten Free Brownies

Instructions
- Preheat the oven to 350°F and grease an 8x8 inch pan.
- Melt the coconut oil and ½ cup of chocolate chips in a small pot over low heat, then set aside to cool slightly.
- In a small bowl, mix the flaxseed meal and water, and let it thicken.
- Sift together the gluten free flour, cocoa powder, baking soda, and salt in a medium bowl.
- In a large bowl, combine the coconut milk, pure maple syrup, vanilla extract, flaxseed mixture, and the melted coconut oil/chocolate mixture.
- Stir in the dry ingredients until well combined.
- Transfer the batter to the prepared pan and sprinkle the remaining ¼ cup of chocolate chips on top.
- Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool on a wire rack before cutting into squares.
