Ingredients

The batter

  • ½ cup melted coconut oil
  • ¾ cup vegan chocolate chips
  • 4 tsp flaxseed meal
  • 3 tbs water
  • 1 ¼ cups gluten free flour
  • cup cocoa powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup coconut milk
  • ¾ cup pure maple syrup
  • 1 tsp pure vanilla extract

Topping

  • ¼ cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease an 8x8 inch pan.
  2. Melt the coconut oil and ½ cup of chocolate chips in a small pot over low heat, then set aside to cool slightly.
  3. In a small bowl, mix the flaxseed meal and water, and let it thicken.
  4. Sift together the gluten free flour, cocoa powder, baking soda, and salt in a medium bowl.
  5. In a large bowl, combine the coconut milk, pure maple syrup, vanilla extract, flaxseed mixture, and the melted coconut oil/chocolate mixture.
  6. Stir in the dry ingredients until well combined.
  7. Transfer the batter to the prepared pan and sprinkle the remaining ¼ cup of chocolate chips on top.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool on a wire rack before cutting into squares.
