Ingredients

  • 2 tablespoons ground flaxseed
  • 5 tablespoons water
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • ¾ cup powdered sugar
  • cup cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt
  • ½ cup vegan dark chocolate chips
  • ½ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • to taste optional flaky sea salt

Instructions

  1. Preheat the oven to 325°F and prepare an 8x8-inch baking dish with grease and parchment paper.
  2. Mix the ground flaxseed with water in a small bowl and let it thicken for 5 minutes.
  3. In a medium bowl, combine the flour, granulated sugar, powdered sugar, cocoa powder, baking powder, fine sea salt, and chocolate chips.
  4. In a large bowl, whisk together the melted coconut oil, vanilla extract, and the thickened flaxseed mixture.
  5. Fold the dry ingredients into the wet ingredients until combined; the mixture will be thick and crumbly.
  6. Transfer the mixture to the prepared baking dish and press it down evenly.
  7. Sprinkle additional chocolate chips on top and gently press them into the dough.
  8. Bake for 25 minutes, or until a toothpick comes out with a few crumbs.
  9. Allow the brownies to cool on a wire rack for at least 45 minutes before slicing.
