Instructions
- Preheat the oven to 325°F and prepare an 8x8-inch baking dish with grease and parchment paper.
- Mix the ground flaxseed with water in a small bowl and let it thicken for 5 minutes.
- In a medium bowl, combine the flour, granulated sugar, powdered sugar, cocoa powder, baking powder, fine sea salt, and chocolate chips.
- In a large bowl, whisk together the melted coconut oil, vanilla extract, and the thickened flaxseed mixture.
- Fold the dry ingredients into the wet ingredients until combined; the mixture will be thick and crumbly.
- Transfer the mixture to the prepared baking dish and press it down evenly.
- Sprinkle additional chocolate chips on top and gently press them into the dough.
- Bake for 25 minutes, or until a toothpick comes out with a few crumbs.
- Allow the brownies to cool on a wire rack for at least 45 minutes before slicing.
