Ingredients

  • ½ cup non-dairy butter
  • ¾ cup natural cane or granulated sugar
  • 2 Tbsp flaxseed meal
  • 5 Tbsp water
  • 1 tsp vanilla extract
  • ¾ tsp baking powder
  • ¼ tsp sea salt
  • ½ cup dutch-process cocoa powder
  • ¾ cup unbleached all-purpose flour
  • cup optional add-ins (walnuts, hazelnuts, or chocolate chips)

Instructions

  1. Preheat the oven to 350°F (176°C) and prepare muffin tins with cooking spray or paper liners.
  2. Mix flaxseed meal and water in a small bowl to create flax eggs and let it rest for 5 minutes.
  3. Melt the non-dairy butter in a large mixing bowl and then stir in the flax egg, sugar, vanilla, baking powder, salt, and cocoa powder.
  4. Whisk the mixture to combine, then add the flour and fold in any optional mix-ins.
  5. Scoop the batter into the prepared muffin tins, filling them ¾ full.
  6. Bake for 22-26 minutes, or until the brownies start to pull away from the sides and spring back slightly when touched.
  7. Let the brownies cool in the tin for 5 minutes before transferring them to a cooling rack.
