Instructions
- Preheat the oven to 350°F (176°C) and prepare muffin tins with cooking spray or paper liners.
- Mix flaxseed meal and water in a small bowl to create flax eggs and let it rest for 5 minutes.
- Melt the non-dairy butter in a large mixing bowl and then stir in the flax egg, sugar, vanilla, baking powder, salt, and cocoa powder.
- Whisk the mixture to combine, then add the flour and fold in any optional mix-ins.
- Scoop the batter into the prepared muffin tins, filling them ¾ full.
- Bake for 22-26 minutes, or until the brownies start to pull away from the sides and spring back slightly when touched.
- Let the brownies cool in the tin for 5 minutes before transferring them to a cooling rack.
