One-Pot Mushroom Pasta

Ingredients

The pasta

  • 300 g dry fusilli pasta

The sauce

  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 6 - 8 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 ½ tbsp Better Than Bouillon Vegetable Stock Paste
  • 3 cups water
  • 1 tsp salt
  • 1 tsp cracked pepper
  • 1 tsp chili flakes
  • 1 - 1 ¼ cups parmesan cheese
  • cup half + half cream

Instructions

  1. Heat olive oil in a large pot over medium-high heat and add garlic, onion, and mushrooms.
  2. Cook until the mushrooms are golden and most of the moisture evaporates, about 6-8 minutes.
  3. Add the remaining ingredients to the pot.
  4. Stir the pasta every 3-4 minutes to combine and prevent sticking.
  5. Cook for 20-25 minutes until the pasta is tender and has absorbed most of the liquid.
  6. Adjust seasoning to taste and serve with red chili flakes and toasted baguette.
