Ingredients

The pasta

  • 8 oz. fettuccine
  • 2.5 cups vegetable broth
  • cup heavy cream
  • ¼ cup grated Parmesan

The sauce

  • 2 Tbsp butter
  • 4 cloves garlic
  • 8 oz. baby bella mushrooms
  • tsp salt
  • tsp freshly cracked pepper

Instructions

  1. Mince the garlic and slice the mushrooms.
  2. Sauté garlic and butter in a deep skillet over medium heat for one minute.
  3. Add mushrooms, salt, and pepper, and sauté until softened and browned.
  4. Add fettuccine and vegetable broth, stir to combine, and bring to a boil.
  5. Cover and simmer on medium-low for about 10 minutes until pasta is tender.
  6. Stir in heavy cream and then add Parmesan, mixing until melted.
  7. Taste and adjust seasoning with salt or pepper as needed, then serve.
