Ingredients

The main ingredients

  • 1 pound dried red kidney beans (rinsed)
  • 1 pound andouille sausage (raw, cut into 1" to 1 ½" pieces)
  • 1 unit yellow onion (diced)
  • 1 unit green bell pepper (seeded, cored and diced)
  • 3 stalks celery (trimmed and diced)
  • 2 teaspoons salt
  • ½ teaspoon red (cayenne) pepper
  • 4 cloves garlic (minced)
  • 4 unit bay leaves
  • ¼ teaspoon dried thyme
  • 3 cups water
  • 3 cups chicken broth

For serving

  • 1 unit brown rice
  • 1 unit fresh chives or green onions (for garnish, optional)

Instructions

  1. Combine all ingredients into the slow cooker.
  2. Cook on high for 7 to 8 hours until the beans are tender.
  3. Serve over brown rice and garnish with chives or green onions if desired.
