White Bean and Orange Salsa

Instructions
- Soak the beans in salted water for 8 to 24 hours, then drain and rinse.
- Cook the beans in fresh salted water for about 45 minutes until tender, then let cool in the cooking liquid.
- In a large mixing bowl, combine the cooled beans with diced onion, scallions, jalapeño, cilantro, orange pieces, lime juice, salt, olive oil, and vinegar.
- Toss the mixture gently and adjust seasoning with more salt, olive oil, or vinegar if needed.
