White Bean and Orange Salsa

Ingredients

The beans

  • ½ lb. dried white beans, such as cannellini or great northern
  • 3 tablespoons salt
  • 1 teaspoon salt
  • 4 qts water

The salsa

  • 2 cups cooked white beans
  • 1 cup red onion, peeled and finely diced
  • 2 to 3 pieces scallions, finely sliced
  • 1 piece jalapeño, seeded and finely diced
  • cup finely minced cilantro
  • 2 pieces oranges, peeled and cut into ½-inch pieces
  • 1 piece lime, juiced
  • ½ teaspoon kosher salt
  • 2 to 3 tablespoons olive oil
  • 1 to 2 tablespoons white balsamic vinegar

Instructions

  1. Soak the beans in salted water for 8 to 24 hours, then drain and rinse.
  2. Cook the beans in fresh salted water for about 45 minutes until tender, then let cool in the cooking liquid.
  3. In a large mixing bowl, combine the cooled beans with diced onion, scallions, jalapeño, cilantro, orange pieces, lime juice, salt, olive oil, and vinegar.
  4. Toss the mixture gently and adjust seasoning with more salt, olive oil, or vinegar if needed.
