Black Bean Salsa

Ingredients

  • 1 can (15 ounce) black beans, drained and rinsed
  • 1 can (14 ounce) corn, drained
  • 1 medium tomato, diced
  • 1 medium green bell pepper, diced
  • ½ cup red onion, diced
  • 1 clove garlic, minced
  • 2 tablespoons fresh cilantro, minced
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons fresh lime juice
  • to taste salt
  • to taste freshly ground black pepper
  • as needed tortilla chips for serving

Instructions

  1. In a large bowl, combine black beans, corn, tomatoes, bell pepper, onion, garlic, and cilantro.
  2. Add olive oil, red wine vinegar, lime juice, salt, and pepper to the mixture.
  3. Stir everything together until well combined.
  4. Cover and chill the salsa until ready to serve.
  5. Serve with tortilla chips or as a side to grilled meats.
