Ingredients

The Salsa

  • 1 15-oz can black beans
  • 1 15-oz can yellow corn
  • 2–3 pieces Roma tomatoes
  • 1 small bell pepper
  • ½ small red onion
  • ½ cup fresh cilantro
  • 1 piece jalapeño
  • 1 large avocado

The Chile Lime Vinaigrette

  • ¼ cup olive oil or avocado oil
  • ¼ cup fresh squeezed lime juice
  • 2 cloves garlic
  • 1 teaspoon honey or maple syrup
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • pinch crushed red pepper flakes
  • ½ teaspoon coarse sea salt
  • ¼ teaspoon black pepper

Instructions

  1. Combine the drained and rinsed beans and corn, tomatoes, bell pepper, onion, cilantro, jalapeño, and avocado in a large bowl.
  2. In a small bowl, whisk together the vinaigrette ingredients.
  3. Pour the vinaigrette over the salsa ingredients and gently toss until evenly distributed.
  4. Serve immediately with tortilla chips.
