Ingredients

  • cups corn kernels
  • cups canned black beans
  • ½ small red onion
  • 1 cup diced tomato
  • 1 whole avocado
  • ¼ cup chopped cilantro
  • 2 Tablespoons olive oil
  • 1 whole lime (juice)
  • 1 clove garlic
  • 1 teaspoon salt
  • a pinch ground pepper
  • a pinch cayenne pepper
  • 1 small jalapeño pepper (optional)

Instructions

  1. Combine all ingredients in a large bowl.
  2. Stir well and taste, adjusting salt, pepper, or cayenne as needed.
  3. Cover and refrigerate for at least 1 hour before serving.
