Ingredients

  • 1 ½ cups cooked black beans
  • ½ medium red pepper
  • ½ medium red onion
  • 1 medium poblano pepper
  • 1 cup diced mango
  • cup chopped fresh cilantro
  • 1 tablespoon orange juice
  • 3 tablespoons rice vinegar
  • 1 tablespoon extra virgin olive oil
  • ½ medium avocado

Instructions

  1. Combine black beans, red pepper, red onion, poblano pepper, mango, and cilantro in a medium-sized bowl.
  2. In a separate bowl, whisk together orange juice, rice vinegar, and olive oil.
  3. Pour the dressing over the black bean mixture and stir well.
  4. Just before serving, toss with avocado.
