Instructions
- Combine olive oil, orange juice, lime juice, garlic, oregano, cumin, salt, and pepper in a bowl and whisk together.
- Add the pork to the marinade, cover, and refrigerate for at least 1 hour.
- Preheat a grill or skillet to medium-high heat and cook the pork for 7-9 minutes per side until it reaches 145°F.
- Let the pork rest for 5 minutes, then slice it thinly.
- Cut the Cuban bread in half lengthwise and then into 4 equal pieces.
- Layer half of the cheese on the bottom pieces of bread, followed by ham, pork, and pickles.
- Add the remaining cheese on top of the pickles, spread mustard on the top pieces of bread, and assemble the sandwiches.
- Melt butter in a pan, press down on the sandwich with a heavier pan, and cook for 3-4 minutes per side until golden brown and cheese is melted.
- Repeat for the remaining sandwiches and cut in half before serving.
