Ingredients

The pork marinade

  • 1 pound pork tenderloin
  • ¼ cup olive oil
  • ¼ cup orange juice
  • 2 tablespoons lime juice
  • 1 teaspoon minced garlic
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground cumin
  • to taste salt and pepper

The sandwich assembly

  • 16 ounces Cuban bread loaf
  • 1 pound Swiss cheese, sliced
  • 1 pound smoked ham, thinly sliced
  • 1 cup pickle chips
  • ¼ cup mustard
  • 1 tablespoon butter

Instructions

  1. Combine olive oil, orange juice, lime juice, garlic, oregano, cumin, salt, and pepper in a bowl and whisk together.
  2. Add the pork to the marinade, cover, and refrigerate for at least 1 hour.
  3. Preheat a grill or skillet to medium-high heat and cook the pork for 7-9 minutes per side until it reaches 145°F.
  4. Let the pork rest for 5 minutes, then slice it thinly.
  5. Cut the Cuban bread in half lengthwise and then into 4 equal pieces.
  6. Layer half of the cheese on the bottom pieces of bread, followed by ham, pork, and pickles.
  7. Add the remaining cheese on top of the pickles, spread mustard on the top pieces of bread, and assemble the sandwiches.
  8. Melt butter in a pan, press down on the sandwich with a heavier pan, and cook for 3-4 minutes per side until golden brown and cheese is melted.
  9. Repeat for the remaining sandwiches and cut in half before serving.
