Ingredients

The slaw

  • 2 small or 1 large fennel bulb
  • 1 lemon zested and juiced
  • 1 orange zested and juiced

The dressing

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh dill, chopped
  • 2 teaspoons honey or stevia to taste
  • ΒΌ teaspoon fine sea salt

Instructions

  1. Thinly shave the fennel using a mandoline or a good knife.
  2. Whisk together the lemon juice, orange juice, olive oil, dill, honey, and salt in a large bowl.
  3. Toss the shaved fennel in the dressing until well coated.
  4. Allow the slaw to marinate for at least 15 minutes before serving.
  5. Serve over a bed of mixed greens or arugula and add extra dressing if desired.
  6. Store any leftovers in the fridge for up to 3 days.
