Citrus Fennel Slaw

The dressing

extra virgin olive oil

fresh dill, chopped

honey or stevia to taste

Instructions
- Thinly shave the fennel using a mandoline or a good knife.
- Whisk together the lemon juice, orange juice, olive oil, dill, honey, and salt in a large bowl.
- Toss the shaved fennel in the dressing until well coated.
- Allow the slaw to marinate for at least 15 minutes before serving.
- Serve over a bed of mixed greens or arugula and add extra dressing if desired.
- Store any leftovers in the fridge for up to 3 days.
