Instructions
- Zest and juice the lemons, then mix in the sugar.
- Thinly slice the apples with a mandolin and add them to the lemon juice mixture to prevent browning.
- Slice the fennel bulbs on a medium to large thickness with the mandolin.
- Trim a tablespoon of fennel leaves and add them to the mixture.
- Combine the apples, fennel, lemon juice mixture, salt, and pepper in a large bowl.
- Let the mixture marinate in the refrigerator for 30 minutes before serving.
