Ingredients

The vinaigrette

  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • 2 tablespoons granulated sugar

  • ¼ teaspoon black pepper

The salad

  • 4 cups arugula
  • 2 small fennel bulbs, trimmed and thinly sliced (about 2 cups or 8 ounces)
  • 1 medium Honeycrisp apple, halved, cored, and sliced ¼-inch thick
  • 1 small red onion, halved and thinly sliced
  • 1 teaspoon minced fresh thyme

Instructions

  1. Prepare the vinaigrette by mixing olive oil, apple cider vinegar, sugar, Dijon mustard, salt, and pepper in a small bowl or jar.
  2. In a large bowl, combine arugula, fennel, apple, red onion, and thyme.
  3. Drizzle the vinaigrette over the salad and toss to combine.
