Ingredients

The salad

  • 4 cups arugula
  • 1 cup sliced apple
  • 1 cup fennel bulb, thinly sliced
  • ½ cup celery, thinly sliced
  • ½ cup candied pecans, roughly chopped
  • 2 tablespoons fennel fronds, chopped (optional)

The dressing

  • cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon shallot, minced
  • teaspoons Dijon mustard
  • 1 tablespoon honey
  • to taste salt
  • to taste pepper

Instructions

  1. Slice the fennel bulb and apples thinly.
  2. In a large bowl, combine the arugula, sliced apples, fennel, celery, and candied pecans.
  3. In a small bowl, whisk together the dressing ingredients until well combined.
  4. Pour the dressing over the salad and toss to combine.
  5. Garnish with fennel fronds if desired and serve immediately.
