Easy Shaved Arugula Fennel Salad with Apple

Instructions
- Combine the apple cider vinegar, lemon juice, salt, pepper, Dijon mustard, maple syrup, and olive oil in a glass jar and shake to mix.
- Remove the tops of the fennel and cut the bulb in half lengthwise, then shave it into thin slices using a mandoline.
- Transfer the shaved fennel to a large bowl and add the arugula.
- Core the apple and slice it thinly, then add it to the bowl with the fennel and arugula.
- Season the mixture with salt and pepper, then toss with the dressing and half of the chopped pistachios.
- Garnish with the remaining pistachios and serve immediately.
