Easy Shaved Arugula Fennel Salad with Apple

Ingredients

The dressing

  • 1 ½ tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • to taste sea salt and ground black pepper
  • 1 teaspoon Dijon mustard
  • 2 teaspoons maple syrup
  • cup olive oil

The salad

  • 1 large fennel bulb (750 grams)
  • 5 oz baby arugula (142 grams)
  • 1 medium apple
  • ¼ cup shelled and salted pistachios, chopped fine

Instructions

  1. Combine the apple cider vinegar, lemon juice, salt, pepper, Dijon mustard, maple syrup, and olive oil in a glass jar and shake to mix.
  2. Remove the tops of the fennel and cut the bulb in half lengthwise, then shave it into thin slices using a mandoline.
  3. Transfer the shaved fennel to a large bowl and add the arugula.
  4. Core the apple and slice it thinly, then add it to the bowl with the fennel and arugula.
  5. Season the mixture with salt and pepper, then toss with the dressing and half of the chopped pistachios.
  6. Garnish with the remaining pistachios and serve immediately.
