Ingredients

The slaw

  • ¼ medium green cabbage
  • ¼ medium red cabbage
  • ½ cup shredded carrots
  • ½ cup cilantro
  • 6 pieces scallions

The dressing

  • 1 ½ tablespoons lemon juice or lime
  • 2 ½ tablespoons orange juice
  • 2 tablespoons rice wine vinegar
  • ¼ cup extra virgin olive oil
  • 1 tablespoon swerve or maple syrup
  • 1 teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • to taste salt and pepper

Instructions

  1. Combine the cabbages, carrots, cilantro, and scallions in a large bowl.
  2. In a blender, mix the lemon juice, orange juice, rice wine vinegar, olive oil, maple syrup, cumin, cayenne, and salt until smooth.
  3. Toss the dressing with the cabbage mixture and serve.
