Cabbage Mango Slaw

Ingredients

The slaw

  • 3 cups shredded cabbage
  • 1 large mango
  • ½ cup cilantro, chopped
  • ¼ cup red onion, finely diced or thinly sliced
  • ½ to 1 unit jalapeno, finely chopped

The dressing

  • 2 tsp olive oil
  • 1 unit orange (zest and juice)
  • 1 unit lime
  • ½ tsp salt

Instructions

  1. Thinly slice or shred the cabbage and place it in a large bowl.
  2. Peel and slice the mango into thin strips or cubes and add to the bowl.
  3. Add the onion, cilantro, and jalapeno to the bowl.
  4. Zest the orange and add the zest to the bowl, then add the juice of half the orange and half the lime.
  5. Add olive oil and salt, then mix gently to combine.
  6. Taste and adjust salt, heat, and citrus to your preference.
  7. Refrigerate until ready to serve.
