Caribbean Mango Slaw

Ingredients

  • ½ a red cabbage
  • 2–3 ripe mangoes (diced or thinly sliced)
  • 1 cup chopped cilantro
  • 1 lime juice
  • 1 grapefruit juice
  • 1 navel or blood orange juice + zest
  • 1 jalapeno sliced
  • ¼ cup white wine vinegar
  • to taste salt
  • to taste pepper
  • a few dashes garlic powder

Instructions

  1. Wash and grate the red cabbage, then place it in a large bowl.
  2. Add the remaining ingredients to the bowl.
  3. Taste and adjust salt and pepper as needed.
  4. Refrigerate for at least 30 minutes to let the flavors develop.
  5. Serve as a side dish, on tacos, or as a quick snack.
