Instructions
- Soak thinly sliced shallots in lime juice with a cube of ice for at least 10 minutes.
- Prepare the other ingredients while the shallots are soaking.
- In a large bowl, combine the mango and sliced cabbage.
- Add the soaked shallots, sliced mint, and jalapeño pepper to the bowl.
- Season with salt and pepper, then pour in the lime juice/shallot soaking liquid.
- Toss the slaw well, taste, and adjust seasoning if necessary.
- Serve the slaw as a side dish.
