Spicy Mango Cabbage Slaw

Ingredients

The slaw

  • 2 whole mangoes
  • ½ small cabbage
  • ¼ cup thinly sliced shallots or red onion
  • ¼ cup fresh mint leaves
  • 1 whole jalapeño pepper

The dressing

  • Juice from 2 limes lime juice
  • to taste kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Soak thinly sliced shallots in lime juice with a cube of ice for at least 10 minutes.
  2. Prepare the other ingredients while the shallots are soaking.
  3. In a large bowl, combine the mango and sliced cabbage.
  4. Add the soaked shallots, sliced mint, and jalapeño pepper to the bowl.
  5. Season with salt and pepper, then pour in the lime juice/shallot soaking liquid.
  6. Toss the slaw well, taste, and adjust seasoning if necessary.
  7. Serve the slaw as a side dish.
