Instructions
- In a small bowl, combine lime juice, maple syrup, cumin, chipotle chili powder, and sea salt. Whisk in olive oil gradually.
- In a large bowl, mix together cabbage, carrots, and cranberries.
- Toss the cabbage mixture with the dressing.
- Refrigerate for at least one hour before serving.
- Top with pumpkin seeds before serving.
