The dressing

lemon juice

lime juice

maple syrup or honey

Instructions
- Grate the cabbage, peppers, and carrots.
- In a large bowl, combine the grated vegetables and scallions.
- In a small bowl, mix the lemon juice, lime juice, maple syrup, olive oil, and salt.
- Pour most of the dressing over the vegetables and stir. Taste and add more dressing if needed.
- Refrigerate for at least an hour to let the flavors mingle.
- Serve cold or at room temperature.
