Ingredients

The slaw

  • 8 ounces coarsely shredded or shaved red cabbage
  • 1 large apple, unpeeled, cored, sliced thinly
  • ½ cup chopped fresh cilantro
  • ½ cup raisins
  • cup sunflower seeds

Smoky Lemon Cumin Vinaigrette

  • 1 ½ tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon agave nectar (optional)
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt (optional)

Instructions

  1. Combine the cabbage, apple, cilantro, raisins, and sunflower seeds in a salad bowl.
  2. Prepare the Smoky Lemon Cumin Vinaigrette by whisking together the olive oil, lemon juice, agave nectar (if using), cumin, garlic powder, smoked paprika, and salt (if using) in a small bowl.
  3. Drizzle the dressing over the salad and toss well.
  4. Serve immediately or refrigerate leftovers in an airtight container for up to 3 days.
