Ingredients

The salad

  • 1 small head red cabbage
  • 2 medium carrots
  • 3 medium radishes
  • ¼ unit onion
  • 1 small fennel bulb
  • 1 small bell pepper
  • 1 cup chopped fresh cilantro
  • ½ cup peanuts

The dressing

  • 2 unit mandarin oranges
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • ½ teaspoon garlic powder
  • 1 teaspoon agave syrup

Instructions

  1. Shred the red cabbage, carrots, radishes, onion, fennel, and bell pepper using a food processor or box shredder.
  2. Transfer the shredded vegetables into a large salad bowl.
  3. Add chopped cilantro and peanuts, then gently toss the ingredients together.
  4. Zest and juice the mandarins into a small bowl.
  5. Add olive oil, black pepper, salt, garlic powder, and agave syrup to the juice and whisk until smooth.
  6. Drizzle the dressing over the salad and mix gently.
  7. Chill the salad until ready to serve, and consume within 3 days.
