Ingredients

The slaw

  • ½ head red cabbage, grated
  • 1 bunch cilantro, finely chopped
  • 1 large carrot, grated
  • 1 whole jalapeño pepper, seeded and minced
  • 1 teaspoon minced ginger

The dressing

  • 2 whole limes, juiced
  • 2 tablespoons olive oil
  • 7 drops stevia
  • 1 teaspoon celtic sea salt

Instructions

  1. Combine the cabbage, cilantro, carrot, jalapeño, and ginger in a large bowl.
  2. Toss the vegetables with lime juice, olive oil, and stevia, then sprinkle with salt.
  3. Serve the slaw immediately.
