Jalapeno Coleslaw

Ingredients

Dressing

  • ¼ cup white vinegar
  • ¼ cup olive oil
  • 3 tablespoons mayonnaise
  • 3 tablespoons lime juice
  • 1 tablespoon sugar
  • ¼ teaspoon celery salt

Slaw

  • 3 cups shredded white cabbage
  • 3 cups shredded red cabbage
  • ½ medium red onion, sliced thin
  • ½ cup shredded carrot
  • 2 medium jalapeños, seeded and finely chopped
  • cup chopped cilantro

Instructions

  1. 1. In a small bowl, whisk together the dressing ingredients: vinegar, olive oil, mayonnaise, lime juice, sugar, and celery salt.
  2. 2. In a large bowl, combine the shredded cabbage, red onion, carrots, and jalapeños.
  3. 3. Toss the vegetable mixture with the dressing until well combined.
  4. 4. Refrigerate the coleslaw for at least 1 hour to allow flavors to meld.
  5. 5. Before serving, toss with fresh cilantro and adjust seasoning with salt and pepper if needed.
  6. 6. Serve chilled or at room temperature.
