Ingredients

The coleslaw

  • 4 cups shredded cabbage mix
  • 1 medium red pepper

The dressing

  • ½ cup chopped cilantro
  • ½ cup chopped red onion
  • ¼ - ½ cup red wine vinegar
  • ¼ cup olive oil
  • 2 tablespoons lime juice
  • 1 - 3 teaspoons cumin
  • ½ teaspoon sea salt
  • ¼ cup extra veggie broth (optional)

Instructions

  1. Mix the dressing ingredients in a jar and let it sit to combine flavors.
  2. Thinly slice the red pepper.
  3. Combine the sliced red pepper and shredded cabbage in a bowl.
  4. Pour the dressing over the cabbage and red pepper, then mix well.
