The dressing

Instructions
- Combine the cabbage, carrots, red onion, parsley, and pepitas in a large bowl.
- In a blender, mix the olive oil, rice wine vinegar, mustard, Swerve, garlic, cayenne pepper, salt, and pepper until smooth.
- Toss the dressing with the cabbage mixture and refrigerate until ready to serve.
