Ingredients

The vegetables

  • ½ cup purple cabbage, finely sliced
  • 4 cups green cabbage, finely sliced
  • 2 cups shredded carrots
  • 2 cups jicama, finely sliced
  • ¼ cup fresh parsley, chopped
  • ½ cup raw sunflower seeds

The dressing

  • ¼ cup olive oil
  • ¼ cup lemon juice (about 2 lemons)
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • ½ tsp sea salt
  • ½ tsp ground pepper

Instructions

  1. Prepare all fresh ingredients and place them in a bowl.
  2. Add sunflower seeds to the bowl.
  3. In a small bowl or jar, whisk together all the dressing ingredients.
  4. Pour the dressing over the veggies and seeds, then toss to mix.
  5. Taste and adjust seasoning with additional salt and pepper if desired.
  6. Refrigerate until ready to serve.
