Healthy Coleslaw
Ingredients
The vegetables

purple cabbage, finely sliced

green cabbage, finely sliced

jicama, finely sliced

fresh parsley, chopped

raw sunflower seeds
The dressing

olive oil

¼
cup
lemon juice (about 2 lemons)

Italian seasoning

garlic powder

ground pepper
Instructions
- Prepare all fresh ingredients and place them in a bowl.
- Add sunflower seeds to the bowl.
- In a small bowl or jar, whisk together all the dressing ingredients.
- Pour the dressing over the veggies and seeds, then toss to mix.
- Taste and adjust seasoning with additional salt and pepper if desired.
- Refrigerate until ready to serve.
