Ingredients

The slaw

  • 8 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 2 large carrots, grated
  • ¼ cup chopped flat parsley

The vinaigrette

  • cup white vinegar
  • 4 tbsp pure maple syrup
  • 2 tbsp lemon juice
  • 1 tbsp avocado oil
  • tsp Himalayan salt
  • ½ tsp ground white pepper
  • ¼ tsp ground ginger
  • ¼ tsp onion powder
  • pinch cayenne pepper

Instructions

  1. Combine the shredded green cabbage, shredded red cabbage, grated carrots, and chopped parsley in a large mixing bowl.
  2. In a separate small bowl, whisk together the ingredients for the vinaigrette until well mixed.
  3. Pour the vinaigrette over the cabbage mixture and mix thoroughly, preferably using your hands.
  4. Cover and refrigerate the coleslaw for at least 4 hours, preferably overnight, to allow the flavors to meld.
