Instructions
- Combine the shredded green cabbage, shredded red cabbage, grated carrots, and chopped parsley in a large mixing bowl.
- In a separate small bowl, whisk together the ingredients for the vinaigrette until well mixed.
- Pour the vinaigrette over the cabbage mixture and mix thoroughly, preferably using your hands.
- Cover and refrigerate the coleslaw for at least 4 hours, preferably overnight, to allow the flavors to meld.
