Ingredients

The coleslaw

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 2 medium carrots, sliced into thin peels
  • 2 medium scallions, chopped
  • heaping ¼ teaspoon sea salt
  • 1 tablespoon chopped fresh parsley
  • ¼ cup toasted sunflower seeds

The dressing

  • ½ recipe Apple Cider Vinegar Dressing
  • 1 teaspoon honey

Instructions

  1. Prepare the Apple Cider Vinegar Dressing and place it in a large bowl with an additional teaspoon of honey.
  2. Add the shredded cabbage, carrots, scallions, and salt, then toss to combine.
  3. Chill the mixture for at least 20 minutes to allow the flavors to meld.
  4. Before serving, season to taste and sprinkle with parsley and sunflower seeds.
