Ingredients

The vegetables

  • 1 bag broccoli slaw
  • 2 cups grated carrots
  • 1 medium red bell pepper
  • 2 medium green onions

The dressing

  • 1 cup non-fat plain Greek yogurt
  • tablespoons apple cider vinegar
  • tablespoons pure maple syrup
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce
  • teaspoons kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Chop the broccoli slaw, carrots, bell pepper, and green onions and place them in a large bowl.
  2. In a separate bowl, whisk together the Greek yogurt, apple cider vinegar, maple syrup, Dijon mustard, hot sauce, salt, and pepper until smooth.
  3. Pour the dressing over the vegetables and toss to coat evenly.
  4. Refrigerate for at least 2 hours before serving to allow flavors to meld.
