Ingredients

The slaw

  • 2 cups finely sliced purple cabbage
  • 2 cups finely sliced green cabbage
  • 2 cups shredded carrots
  • ¼ cup chopped fresh parsley
  • up to ¾ cup mixed seeds (pepitas, sunflower seeds, sesame seeds, poppy seeds)

The dressing

  • ¼ cup olive oil
  • 2 to 3 tablespoons lemon juice
  • 1 clove garlic, pressed or minced
  • ½ teaspoon ground cumin
  • ½ teaspoon salt

Instructions

  1. Combine the prepared purple and green cabbage, carrots, and parsley in a medium serving bowl.
  2. Toast the seeds in a small skillet over medium heat until fragrant, then add them to the mixing bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, garlic, cumin, and salt to make the dressing.
  4. Drizzle the dressing over the slaw and toss until everything is lightly coated. Adjust lemon juice to taste.
  5. Serve immediately or refrigerate for a few hours to marinate.
