Easy Homemade Coleslaw

Ingredients

The coleslaw

  • 1 small cabbage, shredded and chopped
  • 1 large carrot, shredded

The dressing

  • 1 cup mayonnaise
  • cup granulated sugar
  • 2 tablespoons apple cider vinegar
  • 1 ½ teaspoons fresh lemon juice
  • 1 teaspoon salt
  • teaspoon black pepper

Instructions

  1. Cut the cabbage in half and remove the core.
  2. Slice the cabbage into thin strips and chop into small pieces.
  3. Place the prepared cabbage in a large mixing bowl.
  4. Shred the carrot and add it to the bowl with the cabbage.
  5. In a medium bowl, combine mayonnaise, sugar, vinegar, lemon juice, salt, and pepper, mixing until smooth.
  6. Pour the dressing over the cabbage and carrots, mixing thoroughly to combine.
  7. Cover and refrigerate the coleslaw for at least 4 hours before serving.
