Ingredients

The slaw

  • 4 cups coarsely shredded or thinly sliced red cabbage
  • 1 cup coarsely chopped cilantro
  • ½ medium red onion, thinly sliced
  • 4 pieces pink or red radishes, thinly sliced
  • 1 small mango, peeled and chopped
  • 2 tablespoons pumpkin seeds

The vinaigrette

  • 2 limes juiced
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon chili powder
  • ½ teaspoon salt (optional)

Instructions

  1. Mix together the shredded red cabbage, cilantro, onion, radishes, and mango in a large bowl.
  2. In a small bowl, whisk together lime juice, olive oil, chili powder, and optional salt to make the vinaigrette.
  3. Gently toss the vinaigrette into the slaw until combined.
  4. Sprinkle with pumpkin seeds before serving.
